Crafting the Perfect Fall Charcuterie Board: 16 Honeys, One Unforgettable Spread

Crafting the Perfect Fall Charcuterie Board: 16 Honeys, One Unforgettable Spread

Fall entertaining is all about abundance: rich cheeses, savory cured meats, crisp apples, warm spices, and plenty of reasons to linger around the table. But every great board needs a bridge between those bold, salty flavors, and that’s where honey shines.

At Mitchem Bee Company, we have 16 honeys to explore: nine varietal raw honeys and seven organic infused honeys. Add our 1.5 lb. Raw Wildflower Chunk Honey with honeycomb, varietal sampler, and bee pollen, and you have everything you need to turn a simple cheese board into a memorable fall tasting experience.

Why Fall Was Made for Gatherings

If you ask us, fall is the most beautiful season of all. The light turns golden a little earlier, the air gets crisp, and everything feels softer in the best way. Candles flicker against warm wood, sweaters come back out of the closet, and slow evenings start to feel like something worth protecting.

There’s just something about this season that pulls people closer. Fall doesn’t ask for big, loud parties. It invites the kind of gathering where people linger a little longer, refill their plates, and settle in. It’s the season of more intimate tables, cozier corners, and conversations that stretch into the night.

That’s why we love a charcuterie board this time of year. Whether you’re planning a date night in, a Sunday with family, a long-overdue catch-up with old friends, a quiet night for two, or a house full of people for the game, there’s a board that fits the moment perfectly.

No matter the size of the group or the mood of the evening, a board is one of the easiest and most generous ways to feed people you love. It feels welcoming. It gives everyone something to reach for. And somehow, it always makes the whole night feel a little warmer.

Our Favorite Fall Pairing Starting Point

Fall gatherings are one of my favorite parts of the season, and honey is the ultimate bridge between savory cured meats and rich cheeses on a charcuterie spread. Here's how Megan and I build our favorite autumn board and match our honeys to each element:

Brazilian Pepper Honey + Sharp Cheddar or Creamy Goat Cheese: The bold, subtle pepper bite cuts right through the richness of sharp cheddar and elevates earthy goat cheese. Add a strip of prosciutto or spicy salami for the ultimate bite.

Orange Blossom Honey + Creamy Brie or Camembert: The bright, citrus-forward notes contrast beautifully with buttery, soft-ripened cheeses and fresh apple or pear slices.

Wildflower Honey + Aged Gouda or Blue Cheese: Deep, floral notes pair effortlessly with salty, nutty cheeses and roasted pecans or walnuts.

Those three pairings are the perfect place to begin. From there, you can build a board that moves from delicate and floral to dark, rich, fruity, and fiery.

The Nine Varietal Raw Honeys

Every varietal in our Varietal Raw Honey Collection is raw, unfiltered, single-origin honey sourced from a specific floral region. Each one brings its own personality to the board.

  1. Wildflower Honey, Florida
Floral and layered, Wildflower is a natural match for aged Gouda, blue cheese, roasted pecans, and walnuts. Add figs or pears for a balanced bite.
  2. Orange Blossom Honey, Florida
Bright and citrus-forward, Orange Blossom is beautiful with Brie, Camembert, fresh apples, pears, and prosciutto. Its lighter profile also works wonderfully with toasted baguette.
  3. Tupelo Honey, Florida
Mild, buttery, and famously slow to crystallize, Tupelo Honey complements Manchego, fresh chèvre, and prosciutto. Try it with a few grapes or a slice of pear to let its soft floral character come through.
  4. Saw Palmetto Honey, Florida
Robust, dark, and molasses-like, Saw Palmetto stands up to powerful flavors. Serve it with smoked Gouda, aged cheddar, smoked meats, and blue cheese.
  5. Gallberry Honey, Florida
Delicate and mild, Gallberry is best with cheeses and meats that won’t overpower it. Pair it with sharp provolone, Parmigiano, and lighter cured meats such as sliced soppressata or mild salami.
  6. Brazilian Pepper Honey, Florida
With its subtle pepper bite and earthy sweetness, Brazilian Pepper Honey is made for sharp cheddar, creamy goat cheese, prosciutto, spicy salami, and seeded crackers.
  7. Blackberry Honey, Georgia
Jammy and berry-forward, Blackberry Honey brings a deep fruit note to the board. Try it with Brie, ricotta, blue cheese, prosciutto, fresh blackberries, and figs.
  8. Clover Honey, North Dakota
Clean, classic, and neutral, Clover is the workhorse of the collection. It pairs easily with burrata, cream cheese, mild Havarti, fresh mozzarella, and lighter crackers.
  9. Sourwood Honey, North Carolina
Prized for its buttery, caramel-like flavor, Sourwood is exceptional with aged Gouda, salty blue cheeses, spiced nuts, and rustic bread.

For guests who want to compare several profiles side by side, set up a Varietal Raw Honey Sampler as a dedicated honey flight tasting station. Include small tasting spoons and encourage everyone to sample the honey on its own before pairing it with cheese.

Seven Infused Honeys for More Flavor

Our Infused Raw Honey Collection starts with raw Florida Wildflower Honey and real organic fruits, herbs, and peppers. The ingredients are cold-infused, not cooked into the honey, so each jar brings a clear, natural flavor to your fall spread.

  • Organic Blueberry Infused Raw Honey: Pair with Brie, goat cheese, ricotta, prosciutto, and fresh berries. Its jammy fruit flavor feels right at home beside a soft cheese.
  • Organic Elderberry Infused Raw Honey: Dark, tart, and earthy, Elderberry is excellent with aged cheeses, dark chocolate, prosciutto, and game meats. Add dried cherries or figs for another layer of deep fruit flavor.
  • Organic Lavender Infused Raw Honey: Floral and elegant, Lavender works beautifully with chèvre, ricotta, honeycomb, and buttery crackers. A few fresh grapes or pear slices keep the pairing bright.
  • Organic Hibiscus Infused Raw Honey: Hibiscus brings a vibrant, tangy note that complements feta, goat cheese, fresh berries, pomegranate arils, and crisp apples.
  • Organic Jalapeño Infused Raw Honey: This mild hot honey is delicious with pepper Jack, sharp cheddar, chorizo, spicy salami, and fried chicken biscuits. It’s also an easy way to add sweet heat to a warm cracker topped with cheese.
  • Organic Thai Chili Infused Raw Honey: Sharper and hotter, Thai Chili Honey cuts through rich cheeses, smoked meats, Manchego, chorizo, and salami. Use a small drizzle: this one is meant to wake up the board.
  • Organic Ghost Pepper Infused Raw Honey: For serious heat lovers, Ghost Pepper Honey belongs beside extra-sharp cheddar, pepper Jack, smoked sausage, chorizo, and fried chicken biscuits. A little goes a long way.

Our hot honeys are cold-infused with 100% organic peppers. Peppers appear on the Environmental Working Group’s Dirty Dozen list, which is why we choose organic ingredients for these bold blends. Capsaicin, the compound responsible for pepper heat, is traditionally associated with potential wellness benefits, but hot honey is first and foremost a flavorful culinary ingredient. Enjoy it for the taste.

Three Whipped Honeys for the Cozy Table

If you love honey on a board but want something a little easier to spread, Mitchem Bee Company's whipped raw honey is the answer. It’s the same raw, unfiltered honey, simply whipped to a thick, buttery, spreadable texture that stays put on a cracker or piece of bread instead of dripping everywhere. For a fall board—especially when guests are standing around with a plate in one hand—that makes a real difference.

Our whipped honeys come in 12 oz. jars, and because they’re still raw, they keep the natural character and enzymes of the honey. The texture is smooth, rich, and easy to serve. Set one out in a small dish with a spreader and let guests help themselves.

  • 12 oz. Wildflower Whipped Raw Honey — Clean, floral, and classic. It’s wonderful spread on a warm biscuit, on a cracker with Brie, or swirled onto a board alongside apple slices.
  • 12 oz. Turmeric & Ginger Whipped Raw Honey — Warming ginger and earthy turmeric make this one a natural fit for a fall board. Try it with sharp cheddar, aged Gouda, and roasted squash, or stir a spoonful into a mug of hot tea or cider. Turmeric and ginger are traditionally associated with wellness, but here they’re meant to be enjoyed first for their flavor.
  • 12 oz. Turmeric & Cinnamon Whipped Raw Honey — Cinnamon and turmeric make this the most autumnal of the three. It’s especially lovely with Brie, chèvre, baked apples, pears, and gingerbread or spice cake.

How to Build the Perfect Fall Charcuterie Board

You don’t need a professional catering setup. Start with a large wooden board, slate platter, or clean serving table and build in layers.

1. Choose three to five cheeses

Aim for a variety of textures:

  • One soft or bloomy cheese, such as Brie or Camembert
  • One fresh cheese, such as chèvre, ricotta, or burrata
  • One firm cheese, such as Manchego or Gouda
  • One aged cheese, such as sharp cheddar or Parmigiano
  • One blue cheese for a bold, salty contrast

2. Add two to three cured meats

Prosciutto, spicy salami, soppressata, chorizo, and smoked meats all give honey something savory to balance. Fold prosciutto into loose ribbons and arrange salami in small overlapping rows.

3. Bring in fall fruit

Use apple and pear slices, fresh or dried figs, pomegranate arils, grapes, and berries. Fruit adds color, acidity, and natural sweetness while helping guests build complete bites.

4. Add crunch

Candied pecans, walnuts, Marcona almonds, pumpkin seeds, and seeded crackers bring texture. Our personal upscale favorite that many people don't think of is macadamia nuts - yum! Place nuts in small clusters near the honey and cheese pairings they complement best.

5. Garnish with bread and seasonal details

Add sliced baguette, rustic bread, crostini, or sturdy crackers. Then decorate with cinnamon sticks, rosemary sprigs, mini pumpkins, and dried orange slices for an unmistakable fall feel.

6. Finish with An Assortment of Mitchem Bee Company Raw Honeys

Make Honey the Centerpiece

The 1.5 lb. Raw Wildflower Chunk Honey is a showstopper. Using the jar itself, or emptying the jar into a decorative glass or vintage crystal bowl, place the honey with comb near the center of the board and serve it with Brie, blue cheese, goat cheese, or sharp cheddar. The edible honeycomb adds a chewy texture and makes the board feel especially abundant.

Set each additional honey in glass jars or bowls, or their existing bottles, and give every varietal its own spoon or honey dipper. If you transferred them from their original Mitchem Bee Company packaging, label every jar so guests know what they’re tasting! Keeping the honey station in the center makes it easy for everyone to explore. Or, simply use our 2-ounce jars that come pre-labeled in our varietal samplers that are the perfect single-use size for beautiful charcuterie displays.

For an extra finishing touch, sprinkle Bee Pollen over chèvre, ricotta, or honey-drizzled cheese. Its golden color adds beautiful texture and visual interest.

Serving Tips for Your Honey Flight

  • Serve honey at room temperature for the best texture and easiest drizzling.
  • Use small glass jars, ramekins, or squeeze bottles for clean serving.
  • Give each honey its own dipper to prevent flavors from mixing.
  • Label every honey with its varietal or infusion.
  • Start with delicate honeys before moving to bold and hot varieties.
  • Remember that raw honey may crystallize naturally. That is a sign it has not been overprocessed, not that it has gone bad.
  • To soften crystallized honey, place the container in warm water or set outside on a warm day. Avoid overly hot water and microwaves.
  • Use the Varietal Raw Honey Sampler or Infused Raw Honey Sampler to create a side-by-side tasting flight.

A Sweet Board with a Bigger Purpose

A fall charcuterie board celebrates the flowers, fruit, herbs, and natural landscapes that make these flavors possible. Those same flowers feed bees and other pollinators in your yard and community.

Our philosophy is simple: mow less, plant more, don’t spray. Leave space for blooms, plant pollinator-friendly flowers, and avoid pesticides whenever possible. A less manicured landscape can be a healthier one for bees.

When you choose Mitchem Bee Company, you’re choosing honey that is raw, unfiltered, single-origin, and 100% Made in the USA. You’re also supporting a small, family-owned business committed to healthy hives, ethical beekeeping, and quality over quantity.

Build your board with the Varietal Raw Honey Collection, explore the Infused Raw Honey Collection, or start with a sampler and let your guests discover their favorites.

Gather your people, set out the honey, and enjoy every unforgettable bite. And, as always, thank you for supporting our bees.
