Taste the Mitchem Difference:

Raw Florida Wildflower Honey with Real Honeycomb — Crafted Exclusively By Our Beekeepers.

Honey in its most primal, unprocessed form — and one of the most visually stunning products we make. Our 1.5 lb. Raw Wildflower Chunk Honey is a wide-mouth glass jar filled with pure, raw Florida Wildflower honey from our Lake and Sumter County hives, with generous pieces of real golden honeycomb suspended throughout. It's the closest thing to reaching into a hive and pulling out a frame — and it's extraordinary.

What Is Chunk Honey?

Chunk honey is raw liquid honey with actual pieces of comb honey — beeswax cells still filled with honey, exactly as the bees made them — suspended inside the jar. The comb is 100% edible: the beeswax is food-grade, the honey inside the cells is raw and unfiltered, and the texture is unlike anything else in our lineup. Chewy, waxy, intensely floral, and deeply satisfying in a way that liquid honey simply can't replicate.

What Does It Taste Like?

The liquid honey is our signature raw Florida Wildflower — rich, warmly sweet, and full of complex floral character from the wildflowers of Lake and Sumter County. The honeycomb pieces add a different dimension: a more concentrated, intensely floral sweetness with a waxy chew that slowly releases honey as you eat it. Together, they create a layered tasting experience that stops people mid-bite every single time.

How to Use Chunk Honey

The star of any charcuterie board — place the jar open on the board and let guests scoop out comb and honey together. Spread over warm biscuits or toast and let the comb melt slightly into the bread. Pair with aged cheeses — the waxy texture and intense sweetness of the comb is exceptional against sharp cheddar, blue cheese, or aged gouda. Eat straight from the jar with a spoon. Or gift it — it's one of the most visually impressive honey products we make and one of the most memorable gifts a food lover can receive.

Frequently Asked Questions

Is the beeswax safe to eat?

Yes — completely. Beeswax is food-grade and has been consumed by humans for thousands of years. It's flavorless and passes through the digestive system without being absorbed. Most people chew the comb until the honey is released and then swallow or discard the wax — both are perfectly fine.

How do I store chunk honey?

Store at room temperature, away from direct sunlight and moisture. Do not refrigerate — cold temperatures will cause the liquid honey to crystallize faster and can make the comb harder to work with. If the liquid honey crystallizes, place the jar in warm water to return it to liquid form. The comb itself is shelf-stable indefinitely.

What makes this different from regular honeycomb?

Pure honeycomb (comb only) is the wax cells with honey inside, with no additional liquid honey. Chunk honey combines both — the comb pieces are suspended in liquid raw honey, giving you the full experience of both textures and the ability to use the liquid honey for drizzling while enjoying the comb for eating and pairing.
