Taste the Mitchem Difference:
Small-Batch Original Whipped Raw Florida Wildflower Honey — Crafted Exclusively By Our Beekeepers.
Wildflower Whipped Raw Honey is the purest expression of whipped honey we make — and the one that stops people at our market table every single time. Here at Mitchem Bee Company, we take 12 oz. of pure raw Florida Wildflower honey from our Lake and Sumter County hives and transform it through a slow, cold-whipping process into a thick, cloud-like cream that spreads like butter, melts on your tongue, and stays put on everything you put it on. No drips. No mess. Just Florida wildflower honey in its most luxurious form.
What Is Whipped Honey?
Whipped honey (also called spun or creamed honey) is made by carefully controlling the crystallization process of raw honey through cold-whipping — creating millions of tiny micro-crystals that give it a smooth, spreadable texture instead of the chunky granulation that happens naturally. It's still 100% raw and unfiltered. The process changes the texture, not the honey. All the natural enzymes, pollen, and antioxidants are fully intact in every jar.
What Does Wildflower Whipped Honey Taste Like?
Everything you love about our raw Florida Wildflower honey — rich, warmly sweet, and full of complex floral character — but in a velvety, melt-in-your-mouth texture that makes it feel like an entirely different experience. The buttery mouthfeel amplifies the floral notes in a way that liquid honey simply can't. It's the same honey, elevated.
How to Use Wildflower Whipped Honey
Spread it over warm biscuits or toast straight from the oven. Scoop it onto a charcuterie board alongside aged cheeses and cured meats. Dollop it over fresh fruit or Greek yogurt. Stir it into oatmeal or a warm latte. Use it as a glaze for roasted chicken or pork. Or eat it straight from the jar with a spoon — the most versatile honey in our lineup in its most satisfying form.
Whipped Honey vs. Crystallized Honey — What’s the Difference?
Crystallized honey happens randomly and produces large, gritty crystals that most people find unpleasant. Whipped honey is intentionally crafted — the cold-whipping process creates uniform micro-crystals that produce a silky, smooth texture with no grittiness whatsoever. If you've ever pushed a jar of crystallized honey to the back of the cabinet, whipped honey is the answer you didn't know you were looking for.
Potential Health Benefits of Whipped Raw Honey
Because our Wildflower Whipped Honey is cold-whipped and never heated, it retains the naturally occurring enzymes, antioxidants, and trace pollen that raw honey is known for — everything that heat processing destroys. The whipping process changes the texture only; the raw honey inside is identical in nutritional profile to our liquid raw wildflower honey. (Always consult your doctor regarding your specific health needs.)

Frequently Asked Questions About Wildflower Whipped Honey
What makes Mitchem Bee Company’s Whipped Honey different?
Most whipped honeys on the market are made from blended or imported honey, or are heat-processed before whipping. Ours starts with 100% raw, unfiltered Florida Wildflower honey from our own Lake and Sumter County hives — cold-whipped without any heat at any stage. The result is a whipped honey with genuine raw honey character: complex floral flavor, intact enzymes, and a texture that's genuinely cloud-like rather than waxy or grainy.
Will whipped honey melt or change texture?
Whipped honey is temperature sensitive — it's a natural product and will soften in warm conditions. While it leaves our shop in perfect, fluffy condition, we cannot guarantee it will maintain that exact texture during transit. Even if it arrives softened or melted, it's still 100% delicious and safe to enjoy. We are unable to offer refunds or replacements for texture changes due to heat or shipping conditions outside our control. By purchasing, you're agreeing to accept the honey in whatever delicious condition it arrives in.
Does whipped honey crystallize?
Whipped honey is already in a controlled crystalline state — that's what gives it the smooth, spreadable texture. Over time it may firm up further, but it won't develop the large, gritty crystals of uncontrolled crystallization. If it becomes too firm, let it sit at room temperature for a bit or place the jar in warm (not hot) water to soften it back up.
What does Wildflower Whipped Honey pair best with?
Its rich, floral sweetness makes it one of the most versatile products we carry at Mitchem Bee Company. It's exceptional spread over warm biscuits, toast, or English muffins; dolloped onto charcuterie boards with aged cheeses; stirred into oatmeal or a warm latte; used as a glaze for roasted chicken or pork; and spooned over fresh fruit or Greek yogurt. It's also a stunning addition to a cheese board — the texture makes it far more elegant than drizzling liquid honey.
Important Note on Shipping & Texture
Because our whipped honey is a natural product, it is extremely temperature sensitive. While it leaves our shop in perfect, fluffy condition, we cannot guarantee it will maintain that exact texture during transit. Depending on the temperatures experienced during its journey to you, the honey may soften or melt. Even if it arrives melted, it's still 100% delicious and safe to enjoy.
- We cannot guarantee the honey will arrive in its original whipped state.
- We are unable to offer refunds, returns, or replacements for changes in texture due to heat or other conditions out of our control.
- By purchasing, you're agreeing to accept the honey in whatever delicious condition it arrives in.
